Make Honey-Cinnamon Syrup; keep warm. Heat griddle or skillet over medium-high heat or electric giddle to 375ºF; grease with cooking spray, vegetable oil or shortening. (Surface is ready when a few drops of water sprinkled on it dance and disappear.) Stir remaining ingredients until blended. Pour by slightly less than 1/4 cupfuls onto hot griddle. Cook until edges are dry. Turn; cook until golden. Serve with syrup.
Honey-Cinnamon Syrup:
3/4 cup honey
1/2 cup butter or margarine
1/2 teaspoon ground cinnamon
Heat all ingredients in 1-quart saucepan over low heat, stirring occasionally, until warm.
