    Whole Grain & Banana Pancakes

    List of Ingredients

    1 cup whole wheat pastry flour
    1/2 cup brown rice flour
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1 tablespoon brown sugar
    1/2 cup fat free plain yogurt
    1 cup water
    1 egg white
    1 banana, coarsely chopped
    1 dash nutmeg

    Recipe

    Combine dry ingredients. Beat egg white until frothy and whisk in the yogurt and water. Combine wet and dry ingredients, mixing only until moistened, adding a bit more water if necessary. fold in the banana pieces. bake on a non-stick griddle (electric if possible) at about 375ºF, turning only once. Touch top, if it springs back they are done. Makes 12. You don't eat a whole lot of these, but they can be refrigerated, or frozen for later toasting at another meal.
