    9-inch pastry shell, unbaked
    8 strips bacon
    4-ounce can diced green chilies, drained
    4 green onions, chopped
    1 cup shredded Monterey Jack cheese
    1 cup shredded cheddar cheese
    1-1/4 cups half-and-half
    4 eggs
    1/2 teaspoon salt

    Recipe



    Preheat oven to 425°F. With the tines of a fork prick the bottom and sides of the pastry shell.  Bake for 5 minutes. Reduce oven temperature to 400°F.

    In a large, heavy skillet, cook bacon until brown and crisp.  Remove from skillet; drain on paper towels.  Crumble. Sprinkle bacon, then chilies and green onion over prepared crust.  Combine cheeses; sprinkle over the top.

    In a medium bowl, combine half-and-half, eggs, and salt; beat until blended.  Pour into crust. Bake for 45 minutes or until a knife inserted in the center comes out clean.  Let stand for 5 minutes before serving.
