Broccoli Rice Quiche

1 1/2 cups milk
3 eggs
1 Tablespoon Dijon mustard
1/4 cup finely chopped onion
3/4 cup shredded Swiss cheese
One 2-ounce jar diced pimentos drained
1/2 cup fresh broccoli
3/4 cup instant brown or white rice Recipe
Heat oven to 350 degrees. Spray a 9-inch pan with non-stick cooking spray. In a large saucepan, heat milk until very hot but not boiling. Meanwhile, in a small bowl, beat eggs and mustard until well blended. Add onion, cheese, and pimentos; mix well. Stir broccoli and rice into hot milk. Slowly add egg mixture, stirring constantly. Pour into sprayed pan. Bake at 350 degrees for 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. Serves: 6.
