    1 cup mushroom -- chopped
    1/2 cup celery -- finely chopped
    1/2 cup green onion -- finely chopped
    2 tablespoons butter
    6 eggs
    1 1/2 cups milk
    1/4 cup flour
    1 teaspoon seasoned salt
    2 teaspoons salt
    1 teaspoon paprika
    1/8 teaspoon Tabasco sauce
    1 cup ham -- finely chopped
    1 cup cheddar cheese -- finely grated
    1 cup Swiss cheese -- finely grated

    Saute mushrooms, celery and onion in butter; set aside. Beat eggs, add milk, flour, salt, and paprika, Tabasco, seasoned salt and ham. Beat well. Stir in cheeses. Cover and chill overnight in baking dish. Bake in 350ºF oven for 50-55 minutes. To test for doneness, insert sharp knife in center of mix. If it comes out clean, quiche is ready to take out.
