Easy Spinach Potato Brunch Quiche

2 cups frozen hash brown patties, thawed
2 tablespoons oil
4 cups baby spinach leaves
1/2 tablespoon salt
1/4 teaspoon pepper
3 large eggs
1 1/4 cups half and half OR milk
2 cups shredded colby-jack cheese
1 unbaked 9" pastry shell
sour cream (optional)
Recipe
Preheat oven to 375ºF. In a large skillet over medium-high heat, cook potatoes in hot oil for 5 minutes or until browned, stirring occasionally. Add spinach; cover. Reduce heat to low; cook 3 minutes or until spinach is wilted. Remove from heat; add salt and pepper. In a large bowl, beat eggs. Add milk, spinach mixture and 1 1/2 cups cheese; mix well. Pour mixture into pastry shell. Bake for 50 minutes or until center is set. Remove from oven; sprinkle with remaining cheese. Let stand 10 minutes before serving. Serve warm or at room temperature. Serve with sour cream, if desired.
