French Potato Pie with Cheese & Chives

List of Ingredients
9 inch deep frozen pie shell
(baked at 400ºF for 10 minutes
lightly browned)
1 cup instant mashed potatoes
2 cups nonfat cottage cheese
1/4 cup lowfat cream cheese
2 eggs
1/2 cup lowfat sour cream
1/3 cup grated parmesan cheese
1/3 cup chopped chives
1 tablespoon chopped parsley
salt and pepper to tasteRecipe
Prepare pie shell. Combine remaining ingredients and beat until well blended. Pour mixture into prepared pie shell and place on a cookie sheet. Sprinkle top with a little additional grated parmesan cheese. Bake in a 350ºF oven for about 40-45 minutes or until top is golden brown. Serves 6.
