    List of Ingredients




    1/2 cup butter or margarine
    1 cup sliced mushrooms
    1 cup chopped green onions
    4 eggs
    1/2 cup half-and-half
    1 teaspoon salt
    1/2 teaspoon dry mustard
    1/8 teaspoon ground nutmeg
    1 cup shredded Mozzarella cheese
    1 pound crawfish tails
    1 9-inch pie shell, unbaked

    Preheat oven to 400°F. In a large skillet, melt butter; add mushrooms and green onions.  Sauté until tender.  Set aside. In a large mixing bowl, combine eggs, half-and-half, salt, dry mustard, nutmeg, and cheese; mix thoroughly.  Stir in crawfish tails.  Pour into prepared pie shell. Bake for 15 minutes.  Reduce oven temperature to 300°F.  Bake for 30 minutes or until a knife inserted in the center comes out clean.  Let stand for 5 minutes before serving.
