    9-inch pie shell, unbaked
    1 teaspoon vegetable oil
    8 ounces mushrooms, thinly sliced
    1/2 cup shredded Swiss cheese
    2 eggs
    1 cup milk
    1/2 teaspoon salt
    1/2 teaspoon pepper

    Recipe



    Preheat oven to 425°F. With a fork, prick the bottom and sides of the pie shell. Bake 7 to 9 minutes or until set and lightly browned.

    In a large skillet heat oil; add mushrooms and cook, stirring occasionally, until tender and golden brown.Scatter mushrooms over prepared pie shell.  Sprinkle with cheese. In a small bowl, combine eggs, milk, salt, and pepper; beat until blended.  Pour into crust. Bake for 15 minutes.  Reduce oven temperature to 350°F; continue baking 10 to 15 minutes or until filling is puffed and golden brown.
