    List of Ingredients




    1 1/2 cups Monterey Jack cheese
    2 serrano chili peppers (remove seeds) finely chopped
    1/2 cup diced onions
    1/2 cup sliced mushrooms
    1/4 cup diced maple ham OR 1/4 cup prosciutto
    1/4 cup diced tomatoes or a few sun-dried tomatoes
    3 Tablespoons grated Parmesan cheese
    2 teaspoons chopped chives (optional)
    1/8 teaspoon cayenne pepper OR several dashes Tabasco pepper sauce
    5 eggs
    1 cup half & half

    Recipe



    Line bottom of 9-inch pie shell with half of the Monterey Jack cheese. Saute veggies until tender and sprinkle on top of cheese. Add prosciutto or ham. Sprinkle remaining cheese on top of veggie layer. Combine chives, cayenne pepper or Tabasco sauce, eggs, and half & half. Mix well. Pour over ingredients in pie tin. Sprinkle Parmesan cheese on top. Bake at 325 degrees for 1 hour and 15 minutes or until firm and lightly browned on top. Check after 1 hour.
