    Pastry for single crust pie
    1 bunch green onions
    6 thin slices cooked ham, cut in thin strips
    1/2 cup shredded Cheddar cheese
    3 plum tomatoes, cut in 1/4-inch slices
    2 cups milk
    4 eggs
    1/4 teaspoon salt
    1/4 teaspoon cayenne pepper
    Pinch of ground nutmeg

    Preheat oven to 400°F.  Grease a  9-inch pie plate and place on a baking sheet. On a lightly floured board, roll pastry into a 12-inch circle.  Line prepared pie plate, pressing pastry firmly on bottom and sides.  Roll edges under and flute.  Prick pastry all over with a fork. Bake for 8 minutes.  Remove to a rack and cool.

    Spray a medium skillet with non-stick vegetable spray and heat until hot.  Add green onions and ham; cook for 5 minutes, stirring frequently, until ham is browned and onions are tender.  Remove from heat. Sprinkle cheese over pie crust, then top with onion mixture and tomato slices.

    In a medium bowl, combine remaining ingredients; whisk until blended.  Pour into crust.
    Bake for 20 minutes.  Reduce oven temperature to 325°F.  Continue baking for 30 minutes or until a knife inserted near center comes out clean.
