Coffeecake: Banana Macadamia Nut Coffee Cake

2 cups flour
3/4 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup firmly packed brown sugar
1 1/4 cups mashed bananas (2 1/2 large)
2 large eggs
1/3 cup extra virgin olive oil (mild one)
2 tablespoons dark rum or amaretto
1/2 cup sour cream
1 1/2 teaspoons vanilla
1/3 cup flaked coconut
1/3 cup chopped macadamia nuts or pecans
1 tablespoon sugar
1 teaspoon cinnamon
Recipe
Preheat the oven to 350ºF. Oil and flour a 9-inch springform or round pan. In a large bowl, stir together the flour, salt, baking powder, baking soda, and brown sugar. In a blender or food processor, blend the bananas, eggs, oil, rum, sour cream, and vanilla until smooth. Add to the dry ingredients and mix until smooth. Stir in the coconut. Spoon batter into the prepared pan and sprinkle with the nuts. Combine the granulated sugar and cinnamon and sprinkle over the top. Bake until a toothpick inserted in the center comes out clean, about 30 minutes .
