    Coffeecake: Blueberry Oatmeal Breakfast Cake

    1-1/3 cups all-purpose flour
    3/4 cup rolled oats
    1/3 cup sugar
    2 teaspoons baking powder
    1/4 teaspoon salt
    3/4 cup milk
    1/4 cup vegetable oil
    1 egg
    1 cup frozen blueberries ( do not thaw)

    Recipe

    Preheat oven to 400°F.  Spray an 8-inch cake pan with non-stick vegetable spray.
    In a medium bowl, combine flour, oats, sugar, baking powder, and salt.
     
    In a small bowl, combine milk, oil, and egg; beat until well blended.  Pour into flour mixture, stirring until just moistened.  Fold in frozen blueberries.  Spoon into prepared cake pan.
    Bale 20 to 25 minutes or until golden brown and cake pulls away from sides of pan.  Cool in pan on a wire rack for 10 minutes.  Serve warm.
