1/4 cup butter
1/2 cup honey or molasses
1 cup skim milk
2 cups whole wheat pastry flour
1 1/2 teaspoons baking powder
1/4 cup oat bran
1/4 cup wheat germ
2 tablespoons rice flour
1/4 cup chopped walnuts
1 teaspoon cinnamon
1 teaspoon grated orange peel
3 tablespoons granola
1/2 teaspoon cinnamon
Recipe
In food processor, blend together butter, honey and milk. In another bowl, mix together dry ingredients. Add this mix to milk and honey mixture; do not overmix, just blend to combine. Spoon batter into a greased 9" square pan. Combine granola, walnuts and 1/2 tsp of cinnamon, and sprinkle on top of cake. Using spatula, swirl thru the batter. Bake at 350ºF for 30-35 minutes. Serve warm.
