    Coffeecake: Bubble Ring Coffee Cake

    List of Ingredients

    1 cup brown sugar
    2 teaspoons cinnamon
    1/2 cup melted butter
    1 cup chopped nuts

    DOUGH:
    1/2 cup milk
    1/2 cup sugar
    1 teaspoon salt
    1/2 cup butter, softened
    2 packages yeast
    1/2 cup warm water
    2 eggs
    1 tablespoon lemon peel
    4 1/2 cups flour

    Recipe

    Scald milk and stir in sugar, salt and butter. Cool to lukewarm. Sprinkle yeast over warm water in large bowl, and let stand for 5 minutes, then stir until blended. Stir in milk mixture, eggs, lemon peel and 2 c. flour. Beat until smooth. Stir in remaining flour to make soft dough. Cover at least 2-3 hours or overnight. Knead dough on lightly floured surface until smooth and elastic.

    Shape dough into 1" balls, then dip into butter and coat with cinnamon sugar mixture. Place half of the balls in well greased tube pan. Scatter with half of nuts. Repeat and cover, then let rise in warm place until double in bulk, about an hour. Bake at 375ºF for 1 hour. Cool in pan for 10 minutes then invert pan on serving dish; let cool several minutes before removing pan.
