Coffeecake: Cinnamon-Cardamom Coffee Cake

1/2 cup chopped walnuts
1-1/4 cups light brown sugar, divided
1-1/2 to 1-3/4 tsp true cinnamon powder
2 cups all-purpose flour
1 tsp baking powder
1-1/4 tsp baking soda
1-1/2 to 1-3/4 tsp ground cardamom seeds
1/4 tsp salt
8 ounces butter
2 eggs
1 tsp vanilla extract
1 cup sour cream
Whipped cream and toasted almond slices, optional
Recipe
1. Combine walnuts, 1/4 cup brown sugar, and cinnamon; set aside.
2. Sift together the flour, baking powder, soda, ground cardamom, and salt. Set aside.
3. Cream the butter and 1 cup of brown sugar well until light and fluffy. Add the eggs one at a time with the vanilla and beat well.
4. Add the flour mixture, alternating with sour cream, folding after each addition. Do not overmix.
5. Butter and flour an 8- or 9-inch tube pan. Put a third of the batter in the pan, then half of the walnut mixture, then a third of the batter, remaining nut mixture, and the final third of the batter.
6. Bake in a 350-degree oven for 50 minutes or until a skewer inserted all the way through comes out clean. Cool for about 15 minutes, then turn onto a cooling rack or plate and cool completely, at least another half hour.
If desired, serve with whipped cream and a sprinkling of toasted almond slices.
