    Coffeecake: Fresh Peach Coffee Cake

    List of Ingredients

    2 cups sifted flour
    1 tablespoon baking powder
    1/2 teaspoon salt
    1 egg
    1 teaspoon cinnamon
    1/4 cup sugar
    1/3 cup melted butter
    3/4 cup milk
    2 fresh peaches -- (2 to 3)

    CRUMB TOPPING:
    1/4 cup brown sugar
    1/4 cup butter
    1/4 cup flour

    Recipe

    Topping: cream sugar and butter. Cut in flour with pastry blender. Sprinkle mixture on top of peaches. Coffee Cake: sift together dry ingredients. Beat egg slightly. Add sugar and mix well. Stir in melted butter and milk. Add dry ingredients and mix just until moistened. Spread batter in greased 9" square cake pan. Now scald and peel peaches. Slice and arrange in rows over top of batter, overlapping if needed. Sprinkle with crumb topping and bake at 400ºF for 30-35 minutes. Serves 9.
