Eggs - Omelet: The Omelette

2 large eggs
1 tablespoon buttermilk or milk
1 recipe filling mix (see below)
salt and fresh ground black pepper

Beat together eggs and milk. Spray 9" nonstick skillet with cooking spray and heat over med high. When skillet is hot, pour in eggs. As bottom sets, gently lift edge up with spatula and let the egg run underneath. Place filling in center, and using spatula, fold top portion over to cover the filling. Hold plate over pan and flip omelette onto it. Season with salt and pepper.
Cheeses: Sprinkle 2-3 tsp cheeses (cheddar, Swiss, jack, etc.) inside omelette just before folding it over. Heat from the eggs will melt the cheese.
Herbs: Beat 1/4 to 1/2 tsp dried herbs into eggs before cooking. Sprinkle 1/2 to 1 tsp fresh herbs on top.
Peeled Fruits: Beat 1 tbl. sugar into eggs before cooking. Make sure that fruit is ripe but not too juicy, and use no more than 1/3 c. for each single-serving omelette. Follow steps for filling in basic recipe.
Ricotta Cheese: Sweeten about 1/4 c. ricotta per omelette with 2-3 tsp. powdered sugar , or make it savory with 1 tbl. grated Parmesan and a pinch of crumbled dried herbs, such as oregano or basil. Spoon ricotta mixture along the center of omelette just before you fold it over.
