    Waffles: Pumpkin Waffles

    List of Ingredients

    1 cup cooked pumpkin
    4 large eggs, separated
    1 1/4 cups milk
    4 tablespoons unsalted butter, melted
    2 1/2 cups sifted flour
    4 teaspoons baking powder
    1/2 teaspoon salt
    1 teaspoon ground cinnamon
    1/4 teaspoon ground ginger
    1 pinch grated nutmeg & ground cloves
    1/4 cup firmly packed brown sugar

    Recipe

    Preheat waffle iron but do not grease. Preheat oven to 250ºF. Combine pumpkin, egg yolks, milk and butter in large bowl. Sift together flour, baking powder, salt, cinnamon, ginger, nutmeg and cloves and add to pumpkin mixture. Stir in brown sugar, stirring well to mix. Beat egg whites until soft peaks form and gently fold into pumpkin batter. Cook waffles in waffle iron until golden and crisp. Place cooked waffles on a baking sheet, loosely covered with foil in oven to keep warm. When ready to serve, place waffles on heated platter and serve with toppings of choice.
