Waffles: Whole Wheat Yogurt Waffles

1 1/4 cups flour
3/4 cup wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg + 1 egg white
1 cup plain nonfat yogurt
3 tablespoons sugar
3 tablespoons oil
1 1/2 cups skim milk
Recipe
Heat waffle iron; if needed, coat lightly with nonstick cooking spray. In a large bowl, whisk together the flours, along with baking powder, baking soda and salt. In a medium bowl, whisk the egg and white until frothy. Whisk in the yogurt, sugar and oil until smooth, then whisk in milk. Add milk mixture to flour mixture, stirring just until blended, with few lumps remaining. For 8" waffles, ladle about 1 cup batter into waffle iron, and bake according to machine's instructions. Adjust amount of batter for other sizes. Serve hot with maple syrup or other toppings.
