    Bars: Pumpkin Granola Bars

    List of Ingredients

    3/4 cup canned pumpkin
    1 egg
    1/4 cup butter
    1/4 cup honey
    2 tablespoons molasses
    2 cups rolled oats
    1/2 cup chopped walnuts
    2 tablespoons shredded unsweetened coconut
    1/4 cup wheat germ
    1/2 teaspoon cinnamon
    1 tablespoon grated orange peel

    Recipe

    In mixing bowl or food processor, blend together pumpkin, egg, butter, honey and molasses. Add oats, nuts, coconut, wheat germ, cinnamon and orange peel; process until well combined. Spread mixture in lightly greased jelly roll pan. Bake in 350ºF oven for 40 minutes or til golden browned. While still warm, cut into bars. Microwave method: Spread batter onto microwave safe plate or tray and cook, uncovered, on med for 8-10 minutes, turning tray 3 x. Watch carefully as batter burns easily. Makes 30 bars.
