    Skillet & Meat: Fried Grits & Sausage

    1 pound bulk pork sausage
    4 cups water
    1 teaspoon salt
    1 cup quick cooking grits
    1/2 cup cornmeal
    4 tablespoons butter

    Recipe



    Cook sausage till brown; drain well and set aside. Bring water and salt to boil; stir in grits. Return to boiling and then reduce heat, cooking 3 minutes and stirring occasionally. Remove from heat. Add sausage, cornmeal and pepper to taste. Stir well and spread into 9x5 inch loaf pan. Refrigerate overnight. Slice 1/2 inch thick and fry in skillet over med heat in butter. Serve with syrup. Serves 8.
