Sausage/Bacon: Willard's Country Sausage

2 pounds lean pork
2 teaspoons salt
2 teaspoons sage
1 1/2 teaspoons ground black pepper
1/2 teaspoon red pepper
1/2 teaspoon brown sugar
Recipe
Mix all ingredients together well. Shape into eight 4" diameter patties. Heat a large skillet over medium heat. Add patties, four at a time, and cook until browned, about 5 minutes per side. Keep warm while cooking remaining patties.
