Blintz: Cheese Blintz Casserole

BATTER:
1/2 cup butter, melted
1/2 cup sugar
2 eggs
1 cup flour
1/2 cup milk
3 teaspoons baking powder
1 teaspoon vanilla
1 tablespoon cinnamon sugar
LEMON CREAM CHEESE FILLING:
8 ounces light cream cheese, room temp.
1 cup small curd cottage cheese
1 egg
1/3 cup sugar
3 tablespoons lemon juice
Recipe
For filling, beat cream cheese until lightened, about 1 minute. beat in rest of filling ingredients until blended, then set aside. To make batter, in small bowl of electric mixer, beat together all batter ingredients (except for cinnamon sugar), until mixture is nicely blended. Spread 1/2 of batter into buttered 9x13 inch baking pan. Spoon cream cheese filling evenly on top and cover it with remaining batter. Sprinkle top with cinnamon sugar. Bake at 350ºF for 35 minutes, or until top is browned. Cut into squares and serve warm with a dollop of sour cream and a spoonful of crushed strawberries or raspberries. Serves 10.
