Fish/Seafood: Calamari with Garlic Sauce

8 ounces cleaned squid, sliced 1/4" thin slices
1 cup flour
1 teaspoon white pepper
1/2 teaspoon cayenne
2 teaspoons salt
1/2 teaspoon thyme
oil for deep frying
SAUCE:
2 slices crusty white bread, soaked in milk and
squeezed dry
1 tablespoon crushed garlic
1 teaspoon Dijon mustard
1 egg
2 teaspoons red wine vinegar
3/4 cup olive oil
1/2 teaspoon white pepper
1 teaspoon salt
juice of 1/2 lemon
Recipe
For calamari: mix flour and seasonings together. Dust squid with flour mixture and fry in oil until slightly crisp and golden. Drain and serve immediately with sauce. For sauce: blend bread, garlic and mustard. Add egg and vinegar. Blend well, then pour olive oil in steady stream and continue blending till thick (can use food processor). Add pepper, salt and lemon juice. Blend and refrigerate till 1/2 hour before serving.
