Chicken: My Orange Chicken

List of Ingredients
6 chicken hindquarters or 1 fryer cut up
8 dried red chiles
2 onions slivered lengthwise
3 oranges zested and juiced (reserve juice of one half)
2 oranges thinly sliced
3 cloves garlic minced or thinly sliced (3 to 4)
1/4 cup sour orange or lemon juice
1 tablespoon cornstarch
3 tablespoons brown sugar
1 piece ginger (1 inch) gratedRecipe
1. In a large baking dish, place onions on bottom and cover with chicken pieces. Sprinkle dried chiles, garlic slices and sliced oranges on top. Pour orange juice over all.
2. Bake at 375-400 about 1 hour or until chicken is tender and juices run clear. Drain (carefully) juice into saucepan.
3. Make sauce by combining remaining ingredients. Simmer until thickened. Pour over chicken or serve on side over rice.

The garlic may be omitted; the chiles may be decreased, but the baking whole doesn't appear to produce a great deal of heat. I say that, but my tolerance of chile heat is fairly high.
I boned out the leftover chicken and combined it with the sauce. Heated in the microwave for another meal was a snap.
Mushrooms, zucchini, bell peppers, green beans or English peas could easily be added to the onions in the baking dish.
When I drained the chicken, I used a spouted cup to reduce the fat. Quite a bit floated to the top and was certainly healthier being removed.
