Fish/Seafood: Crab in Black Bean Sauce

1 dungeness crab
2 tablespoons cornstarch
2 teaspoons oil
oil for deep frying
2 green onions, cut into pieces
4 cloves chopped fresh garlic
2 teaspoons fresh minced ginger
1 1/2 tablespoons fermented black beans, soaked & rinsed
1 cup chicken stock
1 teaspoon sugar
1 teaspoon salt
1 small onion, cut in eighths
1 green pepper, cut in eighths
2 tablespoons oyster sauce
white pepper
2 teaspoons red pepper flakes
1 teaspoon MSG (optional)
2 tablespoons cornstarch dissolve in 2 tbl. water
2 tablespoons oil
Recipe
Cut up the crab into pieces and discard the shell. Remove all the inedible parts and place the pieces into a bowl. Add the cornstarch and the 2 tsp oil. Coat the crab. Heat enough oil in a wok for deep frying. When hot add the pieces of crab and fry for 2 minutes. Remove from the oil and drain.
Heat a wok over high heat and add in the 2 tbsp oil when the wok is hot. Add a pinch of salt and the ginger and onions and green pepper. Sautee for 1 minute. Add the black beans and garlic and sautee for an additional minute. Add the red pepper flakes and the crab and stirfry for 2 minutes. Add the green onons broth and seasonings. Cover and let simmer for 2 or three minutes. Taste and adjust seasonings to your liking. Thicken with cornstarch mixture. You may not need it all.
