    Rice: Fancy Fried Rice (Lowfat)

    List of Ingredients

    1/4 cup egg beaters + one egg white
    1 tablespoon liquid butter buds
    2 teaspoons minced garlic
    1/2 cup thin sliced celery, green onion, -- carrot
    2 cups cooked rice
    1 cup bean sprouts
    4 tablespoons soy sauce
    1 tablespoon lemon juice
    1 tablespoon cooking sherry
    1/4 teaspoon ground ginger

    Recipe

    Pour eggs into nonstick skillet sprayed with nonfat cooking spray. Cook until set in one large pancake. Remove from pan, cool and cut into thin strips. Heat 1 Tbl. liquid butter buds in pan, adding garlic, celery, green onion (not tops), and carrot. Brown, stirring occasionally, about 2 minutes. Add cooked rice. Stir constantly till heated thru and slightly browned. Stir in bean sprouts. Mix together soy, lemon juice, sherry and ginger; pour over all. Place on serving dish and sprinkle on egg strips and tops of green onions. Serves 8.
