Noodle: Korean Glass Noodles

List of Ingredients
1 package glass noodles (mung bean thread noodles)
1 large carrot, cut into match stick
2 green onions, sliced
2 cloves garlic, to taste -- (2 to 4)
2 tablespoons soy sauce
1 pinch sugar
1 teaspoon rice wine vinegar
1/4 cup chicken stock
1 teaspoon toasted sesame oil
Recipe
Cook noodles according to directions and immediately put in cold water and set aside. Saute or stir-fry veggies in ? tsp. sesame oil until slightly tender (do not brown). In small bowl or cup combine soy sauce, sugar, vinegar and stock. Add liquid to veggies, add noodles, and mix well. Remove from heat. Add 1/2 tsp. sesame oil and toss well. Chill at least 1/2 hour if you want it cold or serve immediately. Serving Suggestions: This dish is great as a meal or a side dish. You can saute chicken, beef, shrimp or pork for added protein. For the truly adventurous garnish with Nori (flavored seaweed) or spicy (hot) sesame oil; just a few drops!!!
