    Noodle: Noodles with Peanut Sauce and Shrimp

    List of Ingredients

    12 ounces rice vermicelli
    1 1/3 cups Thai peanut sauce
    1 pound baby shrimp, cooked and shelled
    12 small scallions, trimmed and thin sliced
    2 tablespoons sesame seeds, toasted

    Recipe

    Soak the vermicelli in hot water for 10 minutes. Drain and cook in boiling water just until tender. Drain, rinse and drain again. Place in a large bowl and toss with the peanut sauce. Mix in the shrimp, scallions, sesame seeds and salt. Divide among 4 plates and serve immediately.
