Chicken: Robbie's General Tso Chicken

1/4 cup cornstarch
2 tablespoons water
1 teaspoon minced garlic
1 teaspoon minced gigner
1/3 cup sugar
1/4 cup soy sauce
2 tablespoons white vinegar
1/4 cup sherry
1/2 teaspoon MSG (optional)
2/3 cup chicken broth, hot
1 1/2 pounds chicken thighs, skinless -- boned and cubed
2 tablespoons soy sauce
1/2 teaspoon white pepper
1 egg, beaten
1/2 cup cornstarch
1/2 cup oil
1 cup scallions, diced
6 small dried chiles, chopped
Recipe
Mix cornstarch and water. Add garlic, ginger, soy sauce, vinegar, sherry, M.S.G., and chicken broth. Mix well. Refrigerate until needed. Mix chicken, soy sauce, white pepper, and egg. Add cornstarch until chicken is coated evenly. Add oil to help separate chicken pieces. Deep fry chicken in 350ºF oil until crispy. Drain on paper towels. Place small amount of oil in wok and heat until wok is hot. Add scallions and peppers and stir-fry briefly. Pour refrigerated mixture and chicken into wok. Simmer and stir until sauce is thick. NOTES : Broccoli is a perfect accompaniment to this spicy Oriental dish.
