Salad: Asian Noodle & Chicken Salad

List of Ingredients
8 Japanese udon noodles or linguine
2 ced cooked chi cken
3/4 livered red be ll pepper 1/2" in length
1/3 livered green onions
3 teaspoons Chopped fresh cilantro or chives
3 teaspoon Chopped fresh mint
2 teaspoons Toasted sesame seeds
~~ -- DRESSING -- ~~
1/4 cup Rice vinegar
3 tablespoon dark sesame oil
2 tablespoon Fresh lemon juice
1 teaspoon Minced fresh ginger
1/2 teaspoon minced fresh garlic
1/2 teaspoon Salt
1/8 teaspoon Crushed red pepper flakes Recipe
Cook pasta according to pkg directions. Drain and rinse with cold water. In a large bowl, combine pasta, chicken, red peppers, green onion, cilantro, mint, sesame seeds and salt.
Dressing: In med. bowl, whisk together vinegar, sesame oil, lemon juice, ginger, garlic, salt and pepper fliakes. Pour over pasta mixture and toss well. Serve immediately or refrigerate until needed.
