Chicken: Shredded Chicken Sesame

3 pounds Chicken

1 teaspoon Sugar
1/2 teaspoon MSG -- optional
2 tablespoons Light soy sauce
2 1/2 tablespoons Sesame paste -- see * Note
1 tablespoon Sesame oil
1 tablespoon Chinese red vinegar
(or cider vinegar)
1 tablespoon Chopped green onion
1/2 teaspoon Grated fresh ginger
2 Garlic cloves -- crushed
1/4 tablespoon Chinese hot pepper oil -- or to taste
Recipe
* Note: Available in Chinese or Oriental markets. One chicken, about 2 3/4 to 3 pounds, lightly boiled, skin removed and discarded, boned and shredded. Use the bones and skin for a later soup stock. Place the shredded chicken in a bowl. Mix the remaining ingredients together to form a salad dressing. Toss with the chicken and arrange on a platter. Garnish with more chopped green onion, if desired. This recipe serves 6 to 8.
