Fish/Seafood: Shrimp and Snow Peas

1/2 pound shrimp, deveined, shelled
3/4 pound trimmed snow peas
1/2 can sliced water chestnuts
2 cloves chopped garlic
1/2 cup chicken broth or water
1 egg white
2 tablespoons cornstarch
oil
1 pinch sugar
salt to taste
Recipe
Marinate shrimp in egg white and cornstarch as well as 1/2 teaspoon salt. Let sit for 1/2 hours. After that drain it and get excess marinade off. Heat enough oil to deep fry the shrimp. The temperature should be about 250 to 275ºF. You're not trying to get the shrimp golden brown. Just trying to greate a texture. Place a few shrimp in at a time until they just turn pink. Remove and set aside. Continue till all the shrimp are done.
Boil some water and add a little salt. Add a drop of oil and place the snowpeas in . Cook for about 1 minute and then remove the snow peas and rinse immediately with cold water. Heat wok or frying pan and add 2 tbsp oil. Add a pinch of salt and garlic. Add the snowpeas and stirfry for 20 to 30 seconds and add in waterchestnuts. Add in shrimp and add the pinch of sugar. Add stock or water and bring to a boil. Taste. If not salty enough add more. As soon as it comes to a boil, remove to a serving dish. If the sauce is too runny watery add a little bit of cornstarch disolved in water.
