Chicken: Spicy Peanut Chicken on a Stick

List of Ingredients
1 pound chicken breast, cut into 2" strips
wooden skewers, soak in water
MARINADE:
2 tablespoons chunky peanut butter
1 tablespoon soy sauce
2 cloves garlic, fine chopped
2 green onion, fine chopped
1/2 teaspoon fresh ginger, grated
2 tablespoons rice wine
1/4 cup defatted chicken broth
roasted chili paste or red pepper flakes
toasted sesame oil (few drops)
fresh basil
Recipe
Combine the ingredients (except basil) for the marinade in a bowl and mix until well incorporated. Add marinade to chicken in either a bowl, sealed container or a zip-lock bag. Let the chicken marinate for at least a half an hour and up to overnight. Heat your bar-b-q or grill on low or let the coals burn way down.
You may want to spray your grill lightly with spray oil if you know food sticks to it. Skewer the chicken, making sure you leave a little room to turn them and so the meat is not packed on too tightly. This could lead to under cooked parts. Cook for a couple of minutes on each side until the outside is brown and the flesh is white and firm. Serve immediately.
Serving Suggestions: This dish can be a main course or an appetizer. It is great for parties and can be served with any number of side dishes. I like to serve it with rice pilaf, jasmine rice, couscous or even corn tortillas.
