This is one of our favorites -- very filling and rich tasting, reheats well as leftovers (refrigerate the biscuits and chicken mixture separately as leftovers)
List of Ingredients
2 pounds chicken breast, cubed
OR 2 Tyson refrigerated roasted chickens -- meat cut up
1 can cream of chicken soup with herbs
1 can cream of chicken dijon soup
1 cup sour cream
1 cup shredded cheddar cheese
3 teaspoons Worcestershire sauce
cayenne to taste
dillweed to taste
TOPPING:
1/4 cup sour cream
1 egg
1 tube refrigerator biscuits
Recipe
Bake refrigerator biscuits per package directions while preparing rest of casserole. If using preroasted chickens, take meat off the carcas and chop meat up into bite-size pieces. If using uncooked chicken, cook chicken cubes until just underdone (will be getting further cooked in the oven). Combine all other ingredients and then stir in chicken. Put into a greased casserole pan. Bake at 350ºF for 20 minutes. Mix topping ingredients. Lay cooked biscuits over top of casserole, and sprinkle topping over top; can sprinkle on some shredded cheddar if desired. Return to oven and bake again for 10 minutes or until topping and cheese are melted. Serves 6 or so.
Very rich and filling - reheats well. Recipe can be halved. Can use any flavoring of cream of chicken soup or plain as desired. A friend of mine makes it withoout the biscuits and serves the chicken and sauce mixture over cooked rice or pasta.
