    Rice-Grains: Buny's Brown Rice, Artichokes & Feta*

    List of Ingredients

    1 can white beans, rinse and drain
    2 cups cooked brown rice
    1 large shallot, minced
    2 large cloves garlic, minced
    1 can artichoke hearts, drained and chopped
    1/3 cup toasted pine nuts, fine chopped
    1/3 cup minced fresh parsley and mint
    3 tablespoons minced fresh dill weed
    4 tablespoons olive oil
    1/2 cup crumbled feta cheese
    3 tablespoons rice wine vinegar
    pepper, sea salt, lemon peel, thyme, basil
    fresh lime juice to taste

    Recipe

    Cook rice according to package directions. Meanwhile, mince the garlic and shallots. Heat olive oil in large skillet over medium heat, then saute garlic and shallots for about 1 minute. Add in the drained artichoke hearts (can also add capers if desired). Saute until heated through. In another small skillet, toast the pine nuts until just toasted, then chop well. Add pine nuts to the skillet with garlic and shallots; season with herbs and other seasonings to taste. Stir in white beans, mashing slightly with mixing spoon, and mix well. Stir in some lime juice and then taste for seasoning. Add in the cooked rice and feta cheese, blending well. Can be eaten as is, or wrapped in tortillas with some spinach leaves, or in romaine lettuce leaves. Serve hot, room temperature or chilled.
