    Poultry: Chicken Piccata *

    Recipe Introduction

    Very good dinner for company.. The chicken is tender, and has some kick from the garlic and wine.

    List of Ingredients

    1 pound chicken breast halves, skinless -- cut 1/4 inch thick
    1/3 cup flour
    1/2 teaspoon salt
    1/4 teaspoon pepper
    2 tablespoons olive oil
    3 cloves garlic -- minced
    1/2 cup dry white wine
    2 tablespoons lemon juice

    Recipe

    Mix flour, salt and pepper. Prepare chicken by slicing into fillets that are about 1/4 inch thick. Coat meat well in flour mixture, and shake off excess. Immediately saute in hot oil for 1 - 1 1/2 minutes, turning once, until cooked through. Remove and keep warm. Add garlic and cook for 30 seconds, stirring constantly. Add wine and lemon juice, cooking until slightly reduced. Serve chicken with sauce. Good with salad, steamed veggies and french bread.
