    Pies: Chocolate Death Mousse Pie *

    Recipe Introduction

    For when you are wanting a chocolate overdose...My husband made me write down this recipe immediately when he tried the first bite. I think we had leftover mousse mixture after filling the pie.

    List of Ingredients

    CRUST:
    1 cup oreo cookie crumbs
    3 tablespoons sugar
    1/4 cup melted butter

    FILLING:
    2 packages ghiradelli double chocolate chips
    OR 24 oz. bittersweet chocolate, chopped
    2 1/3 cups heavy cream, divided
    1/2 cup butter, softened
    2 tablespoons instant coffee powder
    1/2 package small package instant chocolate pudding mix (or white chocolate pudding mix)
    1 teaspoon vanilla
    2 tablespoons sugar

    Recipe

    Prepare cookie crust by combining crumbs, sugar and melted butter. Press into pie plate. Bake at 375ºF for 6-8 minutes and let cool. Combine chocolate chips with 1/3 cup heavy cream and 1/4 cup butter, and instant coffee powder. Cook on high power in microwave until cream is bubbling, then stir well to combine. Can add a little more cream or butter if needed to keep chocolate stirable and creamy but not very thinned. Spoon about 1/3 to 1/2 cup of this mixture into bottom of baked crust and spread over the surface. Allow chocolate mixture to come to room temperature, or cool down in the fridge.

    Whip cream with 1 tsp vanilla and 2 tbl. sugar until stiff peaks form. In large bowl, mix the remaining chocolate mixture with the instant pudding mixture until well combined. Then fold in the whipped cream until well mixed and smooth. Pile into crust over first chocolate layer. Refrigerate until firm and ready to serve. Can garnish with additional cool whip or whipped cream if desired.
