Breakfast: Eggs Benedict *

1 package hollandaise sauce
3 tablespoons lemon juice
2 english muffins
4 slices Canadian bacon
4 eggs
Recipe
Prepare hollandaise sauce per package directions, adding lemon juice to taste. Toast english muffins while preparing eggs. Eggs can be poached or scrambled. Heat Canadian bacon in skillet (can use regular ham if desired). Place 2 English muffin halves per plate, then cover muffin with ham and then with egg. Pour sauce over all. Can also sprinkle with shredded cheese. Serves 2.
