    Candy: Elegant Toffee

    Recipe Introduction

    We made this for christmas and loved it. Did try a variation in using different kinds of chocolate for the top, which turned out well. For the almonds in the toffee, I also made one batch where I chopped up the almonds fine, and stirred them into the cooked toffee just before spreading onto cookie sheet (rather than pouring the toffee over the nuts).

    List of Ingredients

    1 cup butter
    1 cup slivered almonds
    1 cup sugar
    1/2 teaspoon vanilla
    1/4 teaspoon salt
    12 ounces chocolate chips
    2 cups ground walnuts

    Recipe

    On a foil lined baking sheet, arrange the almonds in a single layer. In a 2 qt. saucepan, combine butter, sugar, vanilla, and salt. Cook over high heat with a clean, dry, wooden spoon until butter is melted. Continue cooking and stirring for 5-7 minutes or until the color of unblanched almonds.

    IMMEDIATELY pour candy, without scraping pan, over the almonds. Cool completely. Melt chocolate in 1 cup glass measure, uncovered on high for 1-2 minutes in microwave. Stir every minute until creamy smooth. Spread over the candy mixture. Spread ground walnuts over all. When completely set, break the candy into small pieces. Store in a tight container in the refrigerator
