Almond Pineapple Crisp

2/3 cup sugar
1 tablespoon cornstarch
1 teaspoon grated lemon rind
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
4 apples peeled cored and thinly sliced
1 can pineapple chunks (20 ounce) drained
3/4 cup rolled oats
1/4 cup all-purpose flour
1/4 cup firmly packed brown sugar
1/4 cup butter or margarine
3/4 cup chopped almonds Recipe
Preheat oven to 375�F.� Spray a 1-1/2 quart casserole with non-stick vegetable spray.
In a large mixing bowl, combine sugar, cornstarch, lemon rind, cinnamon, and nutmeg.� Add apples and pineapple; toss well to coat.� Turn into prepared casserole; set aside.
In a medium bowl, combine rolled oats, flour, and brown sugar.� Cut in butter until mixture is crumbly.� Stir in almonds.� Sprinkle evenly over the top of the fruit.
Bake for 30 minutes.� Cover loosely with aluminum foil.� Bake 15 minutes longer or until apples are tender.� Serve warm.
