    Baked Apples in Caramel Cream

    6 tablespoons brown sugar
    1/2 cup hot water
    8 large Rome apples cored
    2 tablespoon lemon juice
    24 caramels
    1 cup heavy cream

    Recipe



    Preheat oven to 350°F.  Spray a 13x9-inch baking pan with non-stick vegetable spray. In a measuring jug, combine brown sugar and water; pour into prepared baking pan.  Peel the top half of each apple; brush with lemon juice.  Place in the baking pan.  Fill each with three caramels.

    Bake for 1 hour or until apples are tender, basting every 20 minutes.  Carefully lift apples, allowing any caramel in centers to drip into the pan.  Place on individual dessert dishes.
    In a small saucepan, combine sauce and cream.  Cool over medium heat, stirring constantly, until sauce is smooth and thick.  Spoon over apples; serve immediately.
