    Blueberries w/ Almond Cream

    2 cup washed blueberries
    1/2 cup reduced-fat cream cheese (Neufchatel)
    1 tbl fat-free milk
    1 tbl powdered sugar
    1/4 tsp almond extract
    2 tbl toasted sliced almonds

    Recipe



    Divide the blueberries among four dessert dishes. Using electric beaters, cream together the cream cheese, milk, and sugar until smooth. Add the extract and mix 10 seconds more. Fold in the almonds.Serve the blueberries with a dollop of almond cream. This recipe yields 4 servings.

    Serving size: about 1/2 cup.

    Comments: This is an elegant way to dress up seasonal berries. You can also use the cream cheese topping to spread on homemade carrot or zucchini bread.
