    Low Calorie/Low Fat Recipes Spring 96, BH&G

    List of Ingredients




    1/2 cup sugar
    1/4 cup hot orange-flavor tea
    1/4 teaspoon vanilla
    4 medium oranges peeled and sliced crosswise
    orange peel curls optional
    fresh mint sprigs optional

    Recipe



    Heat sugar in a small, heavy saucepan over medium-high heat, without stirring, just till it begins to melt. Reduce heat to medium-low; cook and stir about 4 minutes or till sugar is melted and turns a deep golden brown. Do not overcook. Remove from heat. Very slowly and carefully stir hot tea into the caramelized sugar. If necessary, return to heat and cook till any hard sugar particles dissolve. Cool. Stir in vanilla. To serve, pour syrup into six shallow dessert dishes or plates. Arrange orange slices in syrup. If desired, garnish each serving with an orange peel curl and a mint sprig. Makes 6 servings.
