Cinnamon Sauteed Bananas

4 large bananas (slightly underripe)
2 tablespoons sugar
1 teaspoon cinnamon
1 tablespoon fresh lemon juice
4 tablespoons unsalted butter Recipe
Peel bananas and cut into crosswise slices 1/4" thick. Toss in bowl with sugar, cinnamon and lemon juice. When ready to cook, set frying pan over medium high heat, and add butter. When bubbling, scoop in bananas. Toss bananas in pan every 10 seconds for 2-3 minutes until tender. Serve on warm plate; good over vanilla ice cream or pound cake.
