1 package cook and serve pudding mix vanilla
1 package sugar free lemon jello mix
2 cups sliced peaches (1 16 oz can) reserve juice
2 tablespoons chopped pecans
1 can Pillsbury refrigerated buttermilk biscuits
1 tablespoon sugar twin
1/2 teaspoon ground nutmeg Recipe
Preheat oven to 415¼F. Spray an 8x8 inch baking dish with butter flavor cooking spray. In medium saucepan, combine dry pudding and dry jello. Add enough water and reserved fruit juice to make 1 1/3 c. liquid. Add liquid to dry pudding mixture, and mix gently to combine. Stir in peaches, then cook over medium heat, stirring constantly til mixture thickens and starts to boil. Remove from heat.
Pour hot peach mixture into prepared baking dish. Sprinkle pecans evenly over hot peaches. Separate biscuits and cut each into 4 pieces. Evenly drop biscuit pieces over top, then lightly spray biscuit pieces with butter flavor cooking spray. In small bowl, combine sugar twin and nutmeg. Sprinkle this evenly over top . Bake 12-15 minutes or til biscuits are golden brown. Place baking dish on wire rack and allow to cool. Divide into 6 servings; good warm or cold.
