    1 pineapple (very ripe)
    2 tablespoons oil

    Quarter the pineapple, cutting from the base through the fronds. Core with a short, sharp paring knife. Brush the flesh with oil. Heat the grill. Arrange pineapple on grill so that the green fronds overhang the edges of the grill (to prevent burning), and sear both cut sides, about 10 minutes total. Using a sharp knife, cut close to the skin to release pineapple flesh, but leave it in the shell. Slice the flesh crosswise at 1 inch intervals and serve pineapple quarters on a large platter. Makes 4 servings
