Pineapple Graham Cracker Scallop

1 cup +2 tbl. graham cracker crumbs
1 package instant butterscotch pudding mix
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 cup chopped walnuts
2 cups crushed pineapple (drain and reserve liq)
1 egg, beaten
1 teaspoon vanilla
2 tablespoons skim milk Recipe
Preheat oven to 350¼F. Spray an 8x8 baking dish with butter flavor cooking spray. In large bowl, combine cracker crumbs, dry pudding, baking powder and cinnamon; blend in walnuts. Add enough water to reserved pineapple juice to make 1/2 c. liquid. In small bowl, combine egg, vanilla and milk. Add liquid mix to crackers. Mix gently to combine then fold in pineapple. Pour into prepared baking dish. Bake for 35-40 minutes. Place on wire rack to cool. Cut into 8 servings.
