Rhubarb Cobbler

BASE:
1 cup sugar
1/3 cup bisquick or pancake mix
1 teaspoon grated lemon peel
4 cups rhubarb
TOPPING:
3/4 cup pancake mix or bisquick
2/3 cup sugar
1 egg, beaten
1/4 cup melted butter Recipe
Heat oven to 375¼F. For base, combine sugar, pancake mix and lemon peel. Add rhubarb and toss lightly. Place in 9" square glass baking dish. For topping, combine mix and sugar. Stir in egg until mixture resembles coarse crumbs. Sprinkle evenly over rhubarb base. Drizzle with melted butter. Bake in preheated oven 35-40 minutes. Serve with ice cream.
